What entry-level positions are there in this field that an undergraduate college student might consider?

Bookkeeping jobs are everywhere. If you can get just one client, you can start working.

I would love to offer one-on-one sessions with students to give them that little push. All they need is a small nudge, and then they can see the possibilities.

If they get into bookkeeping and find an entry-level AP or AR position, it will give them an idea of whether this is what they want to do long-term.

But at this point, they've already made up their minds. Now it's about finding what works for them. If they can find bookkeeping work while in school, that's the most basic. If they can enjoy that, they'll love the rest.
