What entry-level positions are there in this field that an undergraduate college student might consider pursuing?

I started as a project coordinator, which was definitely the entry-level role at our company. My team, Mercer's Digital Solutions practice, specifically implements Workday.

We only work with Workday, so it's a niche market and a very specific type of company. However, I think any consulting firm, regardless of their focus, will have a resource management office.

A coordinator or assistant role supporting that office and the resource manager is a good place to start. That's how I began, in a support role doing data entry and assisting the resource manager with anything they needed, like reporting.

As you get to know the business well, you make yourself valuable. If you have good management that appreciates your hard work and your knowledge, they will promote you into higher levels from there.
