What entry-level positions can an undergraduate college student consider in this field?
There are pretty clear roles, like an Associate Data Scientist or a Data Engineer. There are also roles that might be a little more removed, like a Data Analyst or a Product Analyst.
Those are still excellent stepping stones. I would always recommend taking that job, then talking to your manager or director.
You could say, "Hey, my goal is to grow into a Data Scientist. I would love to push for more technical projects, and I would love to push for more predictive analytics projects." You can then ask, "Is there anything that I could do with, like, five hours of my 40-hour work week?"
