What entry-level positions are there in this field that an undergraduate college student might consider?
The quest, I would say that being an analyst is something you could consider. We've touched on this briefly, but if you are interested in coding, being an analyst is an easy entry-level job for working at a research center.
Research centers always need someone on staff who knows how to code or a specialized software like GIS or Tableau. These are very high-paying entry-level jobs.
Those are really my fields, in all honesty. The best entry-level jobs pay well. There are other jobs that don't pay well, and I don't want to recommend those because everyone deserves a high-paying job.
I wish these jobs paid more, but there are other options, such as more qualitative jobs like contract interviewing. Being an interviewer is another aspect you could pursue.
Diversifying your skillset to get more competitive jobs is a recommendation I have if you want to work in the research center field.
