What entry-level positions are there in this field that an undergraduate college student might consider?

For a college student interested in animation or production specifically, I would suggest doing a production internship. Many studios, like DreamWorks, Disney, and Pixar, offer these internships.

I strongly recommend trying that out because you will learn the same things a production assistant does in their job. This will give you a sneak peek into how production works.

Being a production intern also helps you be in a safe environment where you can make mistakes and learn. I'm not saying you have to stop making mistakes as you grow, because that's when you learn a lot.

But people are very forgiving when you're an intern and learning. So, doing a production internship would be the best way to get an entry into the industry.
