If you are looking to learn from a founder or work at a startup, I would consider looking for internships. A lot of the time, depending on the startup you're working for, you'll get a real insight into all aspects of the company because it will very likely be a small team.
So, for entry-level roles, if you're still in college, I would focus on internships. From there, if you perform well at that internship, when you graduate, it's possible that they could keep you on. I would start with an internship and work from there.
