Organization is key, especially when you work alone. You have to be super organized and clean. Make sure raw meat doesn't touch vegetables or the cutting board.
The cutting board you use for fish should not be used for chicken. Sanitizing is also very important in the kitchen to prevent anyone from getting sick from your food.
Teamwork is also very important if you work with others in the kitchen. It's a high-pressure environment.
