What entry-level positions are there in this field that an undergraduate college student might consider?

At Analysis Group, the role, at least at the time of this recording, is called an analyst. That's what I stepped into when I graduated from my undergraduate studies.

At other firms, they have different names for that type of position; maybe it's an associate consultant or something else. But basically, it's a supporting consultant role on a case. You help execute the needs the team has for the client, doing whatever you can to operate in that consulting space.
