What entry-level positions in this field might an undergraduate college student consider?

In this role, the typical starting position is called a project assistant or perhaps a project associate. Essentially, you would do similar work and be on the same team as I am.

You would just be doing more entry-level tasks. These would be a bit more administrative and, for that reason, maybe a little more repetitive. Examples include updating user guides or creating tracking sheets for logging test issues.

You would then slowly build up to interacting with the client and internal teams, and even taking a lead on some projects.
